Curry Raisin Chicken Salad

5lbs Chicken Breast (boneless/skinless)
3 sprigs of celery
3 medium size carrots
1 medium vidalia onion
4 scallions
1 red peppers
1 bunch of cilantro (to your preference) I LIKE A LOT OF IT
1 clove of garlic
1/4 cup Mayo
¼ tsp of curry or turmeric
1 tbsp of rice vinegar
1 to 2 cups of raisins
Salt
Pepper

Put all the ingredients in a roasting pan, add salt & pepper, drizzle with olive oil and bake for 45 min at 350 degrees. When at room temperature put chicken in food processor separately from the veggies and pulse until chicken is practically minced. Then do the veggies each separately from each other. In a BIG bowl throw everything together and add Mayo (to your satisfaction), 1tlbs of rice vinegar, 1/4tsp of curry of turmeric, salt and pepper. Lastly, add the raisins. I like quite a few of them per bite so i add close to two cups.

Serve on crackers, phillo dough cups, or in a sanwhich!!!
